With a fair to medium body and pleasant acidity, our Organic Nicaraguan has a wonderfully sweet flavor that is complimented by light lemony undertones.
High altitudes and a pleasant climate create the ideal growing conditions in the north Nicaraguan Mountains of the Segovias, including the regions of Madriz, Nueva Segovia and Esteli. Since this terrain recieves a significant amount of sunlight throughout the day, the crops are cultivated under shade trees. The coffee is manually harvested from November to mid-March when it is wet processed and sun dried.
Approximately 2,300 small-scale Nicaraguan farmers have united to form PRODECOOP, the Central Multiple Service Cooperative. The group supervises all stages of coffee production and provessing in order to create the greatest quality control. The SHG grade signifies that the coffee is grown in the highest altitudes of the country, thus causing slower maturation and reducing the acidity that is associated with many Central American coffees.
