Cultivated at an extreme altitude of 6,500 feet, Guatemala Huehuetenango is produced in the southwest region of the country. In the highlands of northwest Huehuetenango, dry, mountainous family farms are at such heights that cold weather and potential frosts present a danger to the crop. Lacking volcanic soil, the region’s microclimate is most responsible more the coffee’s unique flavor and complex acidity. Guatemala Huehuetenango is hand-picked and then wet processed with precise attention given to the timing of fermentation. Afterwards, it is sun dried in order to complete its processing.
